ok, Rush has a lot of them, 'jacobs ladder' might be my favorite of all time, 'the trees' has a good one as well.

Cygnus...Vismund Cygnus--The Mars Volta (nice buildup and climax section)

Close to the Edge (I Get Up, I Get Down)--Yes (the most beautiful section in a song ever)

Shine on You Crazy Diamond (since the interlude is more or less the song itself, thos one deserves recognition)

Fatal Tragedy --Dream Theater (not a big DT fan but this interlude/outro instrumental never ceases to make me remember the old days when i was a Dt fanboy...)

yeah just listened to that again  earlier,  far and away my favortie G.G. song, and a top 5 fav. prog song.  Call me a wuss, but that middle section (forgot to mention the mellotron touches along with the piano and sweet vocals) puts shivers down my spine.  Just plain gorgous music.
