you should start up a conversation with MikeEnregalia and/or The Progtologist on this subject...they know a lot about this area, however my faves are:

Shadow Gallery, Symphony X, Threshold, Fates Warning & Vanden Plas...hope this helps...

If you're down for some crazy type stuff, try Fantomas or Sleepytime Gorilla Museum, though those arent prog metal in the traditional sense.
