Is Too hard to choose one.
i think that 90% of the prog groups Use some Organ (not hammond specifically)
But Also I love the sound of the Mellotron & the Mini moog

Definately the Moogtron. I don't think there has been any invention in music performance that has changed music as much the Moog. Sure, Chapman sticks and Warr touch guitars are extremely cool, but none of them have had the musical influence of the Moog.

Gotta be the Melly - it's what got me into Prog - Tony Banks, Mike Pinder and Woolly Wolstenholme - and I still can't get enough of it. Hammond and flute pretty close though.

The Hammond and the Mellotron. My favourite instrument, though, is the bass guitar, and prog can boast of some of the best bassists in rock.

Prog boasts some of the greatest bassist beyond genre boundaries. Guys like Myung, Reingold, Squire, Levin, and company are all top class bass players that not even great reggae players can match musically.

Yes, 'cello.
No sniggering at the back!
Just listen to Alamaailman Vasarat and Anekdoten and their 'cellos, they are so depressing, yet atmospheric, but can also be upbeat (especially when played with a bow).

I'll go with the mellotron just for the fact that at always makes my hair stand when listening to early Crimson albums.

Undoubtedly the Mellotron.
I think there was no going back when I first started listening to all the early Moody Blues albums and the amazing work Mike Pinder did with the instrument. Of course I liked King Crimson's Fripp use of it in the first three KC albums. Especially in Lizard.
But I think my life changed the very first time I heard Genesis' The Fountain Of Salmacis and Watcher Of The Skies. Later in Silent Sorrow In Empty Boats (The Lamb Lies Down On Broadway). Tony Banks took the Mellotron yet a step further into the Prog realm.
Thank you Mike Pinder & Tony Banks.

Poor old Fender Rhodes only got one vote...me...A basic but very important instrument for the whole prog, psychedelic and 60s music movement in my opinion.Mellotron is sooo good to though.Wish I could find me one of those....or afford one.Anybody ever heard of an Optigan???Pretty amazing and kooky machine/organ.
